Arla Havarti, tomato and pickled red onion sandwich

INGREDIENTS
200ml white wine vinegar
40g sugar
1 tsp salt
3 black peppercorns
1 red onion, finely sliced
2 slices white sourdough bread or seeded breads
2 Small handful rocket
10g butter
2 slices Arla® Havarti sliced cheese
4 cherry tomatoes, sliced


METHOD
1. In a small pan, add the vinegar, sugar and salt. Heat gently until the sugar and salt have completely dissolved.

2. Remove from the heat and add the peppercorns and red onion slices. Put to one side for 30 minutes.

3. Build the sandwich by placing one slice of bread on a board. Spread with the butter and top with the rocket. Then top the rocket with the Arla® Havarti cheese slices

4. Top with the tomato and onion mixture. Top with the final slice of bread and serve.
