Ingredients
For the Base:
- Digestive biscuits – 250g
- Lurpak® Unsalted Butter (foil-wrapped) – 100g
For the Cream:
- Arla® Fresh Cream Cheese, chilled – 750g
- Zest of 1 lemon
- Lemon juice – 1 tbsp
- Icing sugar – 100g
- Vanilla extract – 1 tsp
- Arla® Heavy Cream (35%), chilled – 300g
For Garnish:
- Mixed berries – 400g
For Serving:
- Fresh mint leaves
Instructions
Preparing the Base:
- Place the butter in a bowl, cover with plastic wrap, and melt it in the microwave for 20 seconds at 800W.
- Add the biscuits to a food processor and blend until they turn into fine crumbs. Pour in the melted butter and continue blending.
- Transfer the mixture to a 23cm round springform pan. Press it gently with your hands, spreading it evenly. Refrigerate the base to set.
Preparing the Cream:
- In a mixer bowl, add the cream cheese, lemon zest and juice, icing sugar, and vanilla extract. Beat until well combined.
- Add the heavy cream and continue beating until the mixture becomes fluffy and firm.
- Remove the cheesecake base from the refrigerator, spread the cream filling evenly over it, and smooth the surface with a spoon. Refrigerate for 3-4 hours.
For Garnishing:
- Top the cheesecake with mixed berries.
For Serving:
- Dip a knife in warm water, cut a slice, and transfer it to a plate. Garnish with fresh mint leaves and serve.
